About the authors:

 Dean
Brettschneider
A professional baker and pâtissier, Dean Brettschneider completed his apprenticeship
in New Zealand before venturing out to work in the US, Britain and Europe gaining
experience in all areas of the trade. This includes working in top bakeries,
exclusive hotels and fine dining restaurants, alongside some of Europe’s
leading bakers and pastry chefs. Today, Dean is based in Shanghai, making his
baked products available at David Laris Slice Delicatessen. Dean is the author
of four other award-winning cookbooks.
