A book of inspirational recipes with international influences - bread, pastries, cakes and desserts.

In this, his fourth book, Dean shares recipes for bread, pastries, cakes and desserts that reflect his broad international experience. There are also extensive instructions on techniques and ingredients, and decoration tips, including instructional chapters on the enclosed bonus DVD.

The text is accompanied by stunning photography by Aaron McLean. Clear technique shots, fabulous food photography and stunning images from London, Padstow, Paris, the Netherlands, Belgium, Germany, Shanghai and New Zealand give this book a truly international flavour.

Recipes include Apricot Brioche Breakfast Plait, Blueberry Cream Scones, Chocolate Chip Hot Cross Buns, Rye Swirl Bread, Apple and Fennel Tarte Tatin and Chinese Flower Steam Buns. Many of the recipes take a traditional delicacy from one side of the world and add a twist from the other ? like Green Tea Madeleines, Chinese Five Spice Chocolate Almond Macaroons or Red Bean Lamingtons. Other recipes come straight from the country of origin, like Almond Croissants from France or the good old Kiwi Mince and Cheese Pie.

Reviews & endorsements:

This book is as much fun to read as it is to cook from. A thorough introduction for beginners and an indispensible reference for experienced bakers. Truly a celebration of this eternal comfort food.

Dean Brettschneider has taught me a great deal about making really good bread.
Rick Stein, The Seafood Restaurant, Padstow, Cornwall, England.

It is wonderful to meet a baker who understands the craft and has a passion that can inspire the general public. Dean is a breath of fresh air.
